peanut butter cups

Saturday, November 15, 2008
Just in case you're interested...Here's the recipe for the peanut butter cups. They are great for holiday entertaining because you can cut them into really small pieces and make them stretch further. They're small but they pack a big punch. Plus, they're REALLY easy to make and usually you have the ingredients on hand already. They're not only good for holiday entertaining, they're good for any day but I would suggest making them when others will be around to eat them because otherwise you could get sucked in by their chocaltypeanutbuttery goodness and eat the whole pan without realizing it!

Here you go:
Peanut Butter Cups
Ingredients:
2 sticks of butter
1 3/4 cups brown sugar
1 1/2 cups powdered sugar
12 oz (1 1/2 cups) peanut butter
1 cup chocolate chips

Directions:
Let one stick of butter soften, then mix with brown sugar, powdered sugar and peanut butter. Press into 9x13 pan.

Melt one stick of butter with chocolate chips. Spread over peanut butter mixture. Let set up in refrigerator. Cut into small squares and enjoy!

These peanut butter cups always remind me of Christmas because I'm pretty sure that I've had them every Christmas since I was little because my mom always made sure they were on hand! I would eat about 20 and then feel sick...but at least it was a good reason to feel sick!

These look yummy! I was thinking about possibly starting a recipe blog and thought it would be cool to open it to have multiple contributor. I have to catch up on grading before I tackle a new project, but would you be interested?
